New Experiences at the Key West Food & Wine Festival

We can’t think of a better way to kick off the New Year than to head to Key West at the end of the month for the Key West Food & Wine Festival, January 25th to 29th.  Get ready to go on a four-day culinary adventure with more than 30 scheduled events that present an authentic taste of Key West, Florida.  There will be brunches and beach bashes, wine dinners, stargazing, seminars and strolls.  On the festival event calendar are some old favorites along with new events and one wine dinner on the beach worth mention.

Justin Vineyards Wine Series Dinner at Southernmost Beach Cafe

Join Master Sommelier, Joseph Spellman from Justin Vineyards & Winery and Executive Chef Matthew Slattery at Southernmost Beach Cafe for the Key West Food & Wine Festival Event: Justin Vineyards & Wineries “Wine Series Dinner” at Southernmost Beach Cafe on Wednesday, January 25th from 7pm – 9pm.


Dry Aged Colorado Strip Steak Parsnip Puree, Gremolata, Asparagus Tips, Pancetta, Port Demi. ~ This dish will be paired with 2010 JUSTIN Isosceles, Paso Robles, CA

Chef Slattery along with his staff have been planning the Justin Wineries Wine Series Dinner at Southernmost Beach Cafe for a few months now. “It has been the work of all the team of chef’s to create a unique dining experience for our guests.”  When asked what is unique about the Key West Food & Wine Festival Wine Maker Series Dinner at Southernmost Beach Cafe this year and Chef Slattery said, “where else can you drink expensive wine, treat yourself to some amazing food, and hang out in your flip-flops on the beach!  Only at the Somo Wine Dinner!”

Tips on Wine Pairing from the Expert


Q & A with Joseph Spellman, Master Sommelier


  1. Joseph, what are your tips when pairing food and wine?
  2. I have always believed, and acutely so since my tenure with Charlie Trotter’s legendary restaurant in the 1990s, that sequencing wine, as well as sequencing food flavors, is the art of selecting delicate, crisp, aromatic, tart wines early, moving to somewhat richer and earthier wines in the middle, and finishing with muscular and higher-alcohol wines with dense main courses. This sequence has endless possibilities, but specifically speaking of wines at Justin and Landmark, I would look at Sauvignon Blanc with cold vegetable and seafood dishes, then Chardonnay with hot seafood, grain based dishes, and light poultry, followed by Pinot Noir or Cabernet Franc with fuller flavors, and Cabernet Sauvignon based blends with meat main courses and cheeses.


  1. Joseph, do you have a favorite food and wine pairing?
  2. Personal favorites are Russian River Chardonnay with seared scallops and fresh herbs in butter sauce; Sonoma Coast Pinot Noir with rare duck breast and wild mushrooms; and rack of lamb with our Justin Justification!
